Finding new recipes that feature marshmallows is good. Elevating that recipe to include a home-made gourmet marshmallow is mind-blowingly good.
I love making marshmallows, but what really soothes my soul is baking treats with marshmallows in them.
I fell in love with a brownie
It started with a marshmallow brownie. I found a recipe for a brownie that incorporated marshmallows and tried it out. I was hooked. The recipe calls for making a fudgy chocolatey brownie. It then melts marshmallows on top and is further topped with a milk chocolate crisp rice cereal peanut butter topping to give a bit of extra crunch and to add a slight taste of peanut butter into the mix to break up the richness of the brownie. The marshmallows are a sweet vanilla addition that provides a chewy bite. The marshmallows stretch and pull as you bite into the brownie to give an extra rewarding incredibly satisfying sensation in every rich brownie bite.
Childhood Favorite Still Holds Up
And after that I was hooked, I moved on to experimenting with cookies and developing an update on the Fluffernutter sandwich. I remember after school a friend and I would make fluffernutter sandwiches taking peanut butter and a jar of marshmallow cream and adding them together on a piece of bread to create the iconic sandwich. I turned it into a cookie adding marshmallows to a peanut butter base cookie. By adding peanut butter instead of fluff, the cookie turns out chewier and stringier (which I think enhances the texture).
